Marc Jacobs

of 1995. Two years later, Marc was transferred to R.J. Grunts, LEYE’s first restaurant, and was quickly promoted to General Manager. It was there that he first worked alongside Rich Melman on the re-development of the restaurant, which went on to launch what would become Marc’s lifelong career in restaurants and hospitality. In Marc’s 14 years as Partner at LEYE, he has led the creation, design and re-concept of more than 16 restaurants across Chicagoland including Beatrix; a restaurant and coffeehouse located in River North, Streeterville and Fulton Market, Beatrix Market; a quick and healthful grab and go experience, Ēma; a Mediterranean and California-inspired restaurant with Top Chef CJ Jacobson, Aba; the sister restaurant to Ēma, featuring a 400-seat restaurant and rooftop patio, The Dalcy; LEYE’s private event hall in Fulton Market, and Bar Ramone; a wine bar featuring Spanish tapas. Marc’s passion lies in restaurant design, menu development, and team building. His restaurants and chefs have earned many accolades including a Michelin Bib Gourmand recognition as well as a spot on Chicago’s top restaurant lists from Zagat, Eater and the Chicago Tribune. Marc sits on Lettuce Entertain You’s Executive Board, is an Advisory Council member and the Executive in Residence at DePaul’s School of Hospitality Leadership, often speaks on restaurant panels and seminars, and enjoys giving back to the restaurant and hospitality industry in Chicago. Marc enjoys spending time with his wife Vanessa and their three children, Samantha, Alexandra and Gabriel, visiting new restaurants, and traveling.

He has also partnered with the Melman siblings to open some of Chicago’s most sought-after restaurants including BBQ and country music spot, Bub City; the tiki-inspired underground lounge, Three Dots and a Dash; lively neighborhood noodle shop, Ramen-san; joint restaurant and music-and-events space, Bub City & Joe’s Live, in Rosemont, Illinois; the expansion of RPM Italian to Washington, D.C.; the classic-meets-contemporary Booth One in the Ambassador Chicago; the “not-your-typical” sushi joint, Sushi-san; and most recently Bar Ramone, a wine bar featuring the heart and soul of Spanish tapas in River North. Psaltis and his partners also host each summer the nation’s premier country music and BBQ festival, Windy City Smokeout. Chef Osaka joined Iron Chef Masaharu Morimoto to work as a sous chef for his restaurants in Philadelphia and New York. Chef Osaka was able to influence menu development as well as further master his craft. In 2009, he went on to work with Chef Daniel Boulud at Café Boulud and Daniel in New York (where Daniel won three Michelin stars in 2010) before returning to Chef Morimoto’s team as a corporate chef where he assisted with training and menu development at Morimoto Napa, Waikiki, Mexico, and Miami. Chef Osaka was also part of the opening team for Chef Morimoto’s Canvas in New York as well as his restaurant in Chicago. Shortly after his arrival in Chicago, Chef Osaka joined Lettuce Entertain You as a corporate chef and served as the visiting chef of Intro from November 2016 – January 2017. Currently, Chef Osaka works alongside chefs in the Lettuce Entertain You test kitchen assisting in menu development for new concepts and existing brands including for Naoki Sushi, Wow Bao, Aba, Booth One and more. Chef Osaka opened Lettuce Entertain You’s first wine bar, Bar Ramone.

Richard Hanhauer

the RPM Restaurants team as Wine Director, where he continues to oversee the beverage programs for RPM Italian and RPM Steak in Chicago, along with RPM Italian in Washington, D.C. In 2018, Hanauer opened the Spanish-inspired wine bar, Bar Ramone, where he is a partner. Hanauer started his wine career working as the sommelier at 160Blue and as a fine wine expert for Levy Restaurants. His career in wine truly came to fruition in 2008 when he was named sommelier of Tru Restaurant in Chicago’s Streeterville neighborhood at the age of 25—the youngest person to ever hold that title at Tru. After having worked there for three years and obtaining his Advanced Certificate from the Court of Master Sommeliers, Hanauer joined L2O restaurant as Wine Director. There, he began crafting one of the world’s finest white wine and champagne menus. In 2013, he joined the RPM Italian team, and soon after began planning the cellars of forthcoming sister restaurant, RPM Steak. Today, he serves as Wine Director for the RPM Restaurants and other projects within Lettuce Entertain You.   During his time at Tru, the restaurant received a James Beard Foundation Award for best service in the country and a Grand Cru Award for its wine list, which is the highest attainable distinction from Wine Spectator magazine. While at L2O, the restaurant received its prestigious third Michelin star; simultaneously Zagat named Hanauer a “30 under 30”. After opening RPM Steak, Hanauer was named “Sommelier of the Year” by Food & Wine magazine in 2015. Since then, all three RPM restaurants have received Wine Spectator’s “Best of” Awards of Excellence as well as three out of three stars from the World of Fine Wine magazine’s awards. Hanauer currently lives in Chicago (and has no plans of changing that) with his wife, Kristen, and pup, Porcini. His greatest pride is the sommeliers with whom he gets to work alongside as well as the fact that he can be at the RPM Restaurants in Chicago while studying for his Master Sommelier diploma.

013, John joined the opening management team at Beatrix River North. He was instrumental in the development of the restaurant’s coffee and music programs and also worked with mixologists to create the fresh-squeezed juice cocktail menu. In 2015, John was promoted to General Manager and led the opening team of Beatrix Streeterville. He helped create the first Beatrix Market, a quick grab and go experience, while also continuing to drive the beverage culture for the Beatrix brand. John is now an Associate Partner, and most recently assisted with the opening of LEYE's first wine bar, Bar Ramone, located in the River North neighborhood of Chicago.   When John is not in the restaurants, he enjoys going to concerts and spending time with his wife, Jenny and their son, George.

Realizing he wanted to make this a full time career, Alex moved to Delray Beach, Florida at the age of eighteen and worked as a Sous Chef for The Office. After gaining more knowledge and experience, Alex moved to Naples, where he became the Sous Chef for Chops City Grill. After spending some time in Florida, Alex decided to move to Chicago in 2015, where he continued to work in the restaurant industry. He joined Lettuce Entertain You as a line cook for TRU and was promoted as Sous Chef within a year. When TRU closed it's doors, Alex helped with the opening of Sushi San in December 2017. When working, Alex enjoys teaching young and ambitious cooks everything he knows, and in return loves learning from them.  In his free time, Alex enjoys searching for new and exciting places to eat in Chicago.

e pursued an associate degree in Restaurant Management. Upon graduation, Javie moved to New Orleans and worked at Commanders Palace, a very well-known restaurant in Louisiana. Looking to learn more about fine dining and Michelin stars, Javie moved to Chicago in 2016 and worked as a line cook at Tru. When Tru closed their doors, Javie learned of Lettuce Entertain You and shifted to Booth One, where he worked his way up to his position as a Sous Chef. After gaining experience, he now works as the Sous Chef of Bar Ramone. In his free time, Javie enjoys dining at different restaurants around Chicago and watching sports.

e moved to Chicago to be the Assistant Manager at Rock Bottom in the Windy City. In 2009, Sharlene joined the Lettuce Entertain You Family as a server at RJ Grunts in Lincoln Park. Just one year later, she was promoted to a Divisional Trainer for various concepts including Foodlife, Mity Nice Bar & Grill, Foodease, Scoozi, Beatrix and Ema. Now, Sharlene is the Divisional Training Director for ten restaurant concepts and is vital in new restaurant openings, staff seminars and outings, and the on-going development of current employees. With a true love for building the training department as the division continues to grow, her favorite part of the job is working with new team members, and being the first impression of a company she is so proud to be a part of. When Sharlene is not in the restaurant, she enjoys reading, trying new restaurants, traveling, visiting her family, and spending time with friends.

Now, Cara proudly oversees the marketing and public relations for Aba, Antico Posto, Bar Ramone, Beatrix, Beatrix Market, Ēma, Rotisserie Ēma, Foodlife, Foodease, L. Woods, Mity Nice Bar & Grill, and The Dalcy. Her favorite part of the job is how every day is different, as well as having the opportunity to express her creativity across multiple different brands that she truly believes in. epted a full-time position as the Catering and Events Coordinator for Compass Group. Three years later and looking for a change, Emily moved to Charleston, South Carolina and worked as a recruiter. Realizing she missed both Chicago and the hospitality industry, she moved back to the Windy City in 2017 and joined the Lettuce Entertain You where she is now an Office Manager at both Ema and Bar Ramone in River North. Emily loves the opportunity to learn about the financial side of the business, while still being able to form and build relationships with staff. In her free time, she enjoys spending time with friends and family, going to concerts at Ravinia during the summer months, cooking healthy and unique recipes, traveling and staying active.

Jessie Parzow

had worked nearly every position, leaving as a corporate trainer. Ready for a change, Jessie was contacted by a Lettuce Entertain You recruiter, and she accepted a job within LEYE in 2014. Jessie became a part of the opening team at Summer House Santa Monica and Stella Barra in Bethesda, Maryland. She relocated to Chicago the following year and is now proud to be the Divisional Trainer for Antico Posto, Bar Ramone, Foodlife, Foodease, L.Woods, Mity Nice Bar & Grill. Having been part of the Lettuce Entertain You family for almost four years, Jessie finds that her favorite thing about the job is the people. She enjoys working with individuals from all walks of life, and though her job is able to teach them & they always seem to teach her something as well. When she isn’t working, Jessie loves to eat her way through the city and spend time with her boyfriend, family and her Corgidor, Pearl.

Jessie Parzow was born and raised in Potomac, Maryland where her love for the hospitality industry first began. In high school, Jessie would frequent PF Chang’s so often as a guest that she was ultimately asked to join the company. She began her career there as a hostess but after seven years, she had worked nearly every position, leaving as a corporate trainer. Ready for a change, Jessie was contacted by a Lettuce Entertain You recruiter, and she accepted a job within LEYE in 2014. Jessie became a part of the opening team at Summer House Santa Monica and Stella Barra in Bethesda, Maryland. She relocated to Chicago the following year and is now proud to be the Divisional Trainer for Antico Posto, Bar Ramone, Foodlife, Foodease, L.Woods, Mity Nice Bar & Grill.
